I kinda tweaked a recipe I had for a spinach salad, and it was great!
Here it is:
1/2 lb bacon, cut into pieces
4 garlic cloves, chopped
juice of one lemon
2 tablespoons sugar
5 Tbs water
bag of fresh spinach
fresh asiago cheese
Fry the bacon until almost crisp and add the garlic, saute for a couple of minutes and turn off the heat. When cooled enough not to spatter, add the lemon juice, sugar and water, and simmer for a few minutes. Toss spinach in a bowl with the grated asiago cheese (I used a larger grate). Pour on the warm dressing.
This is not as sweet as most spinach salads, but very tasty!
