    Anyone ever have this salad?

    Kidney Bean Salad

    1 can of red kidneys beans (undrained)
    2 hard boiled eggs coarsely chopped
    1 small onion diced
    1/4 C of pickle relish
    and some celery if you wish (chopped coarse)
    1/2 C of Mayonaise or Miracle Whip (he preferred Miracle Whip)

    Mix everything in a bowl. Salt and Pepper to taste. Refirgerate until cold.

    I remember a LOT of members posted about this on the other site and while browsing my 1963 Good Housekeeping Cookbook, I found a different version of this salad. I will post it later on in this thread.

      In that first recipe, I tried the recipe and I also drained the kidney beans. I think it would have been too soggy if not. Here is the other recipe I found in one of my older cookbooks.

      CRUNCHY KIDNEY BEAN SALAD
      The Good Housekeeping Cookbook - 1963

      1 pound can kidney beans
      1/2 cup diced celery
      1/3 cup diced sweet pickles
      1/2 cup sliced stuffed olives
      2 TBS snipped scallions
      1/4-1/3 cup mayonnaise
      3 TBS chili sauce
      1/2 tsp salt

      DAY BEFORE: Get beans and other ingredients into refrigerator to chill.

      TO SERVE: Drain kidney beans, rinse in cold water and drain well. Combine beans with the rest of the ingredients. Mix well. Serve chilled.
