Tomato Pasta Salad:
2 medium tomatoes, chopped (about 2 cups)
2 green onions, (with tops) chopped
2 cloves garlic, finely chopped
1/4 cup chopped parsley
2 T. vegetable or olive oil
1/2 tsp. salt
1/2 tsp. dried basil leaves
1/8 tsp. coarsley cracked pepper
1 package (7 oz.s) macaroni shells
Mix tomatoes, onions, parsley, oil, salt, basil and pepper. Prepare macaroni as directed on package; drain. Toss with tomato mixture. Cover and refrigerate at least 2 hours.
