  • Crunchy Buttermilk Coleslaw

    I found this in a magazine over the weekend and made it yesterday. I really enjoyed it. I did use broccoli slaw with carrots so I did not add any more carrots and not as much snow peas.

    Crunchy Buttermilk Coleslaw

    1 lb cabbage thinly sliced (napa or savoy is great) (about 1/2 head)
    5 carrots pealed and grated (1 1/2 cups)
    10 oz snow peas, sliced lengthwise (2 1/2 cups)
    1 cup mayonnaise
    1/2 cup buttermilk
    salt
    1 tbsp light brown sugar
    2 tbsp rice wine vinegar
    1 tsp grated fresh ginger

    Directions

    In a large bowl, toss together cabbage, carrots, and snow peas.

    In a separate bowl, whisk together mayonnaise, buttermilk, salt, brown sugar, vinegar, and ginger until smooth. Pour over slaw and toss to combine.

    Serve immediately or cover and refrigerate.
