Gary Solomon's Italian Red Kidney Bean & Pasta Salad
2 c. red kidney beans, cooked
2 c. elbow macaroni, cooked
1/4 c. celery, chopped
2 T. onion, chopped
2 T. fresh parsley, chopped
1 jalapeno, chopped with some seeds
1 tsp. Italian seasoning blend
3/4 tsp. garlic salt
oregano, a sprinkling
1/2 tsp. freshly cracked black pepper
3/4 c. Pecorino Romano cheese, grated
Combine all ingredients in a bowl and toss with dressing. Sprinkle with a little extra cheese.
Italian Viniagrette Dressing:
1/3 c. extra virgin olive oil
1/2 c. white vinegar
1 tsp. sugar
1 tsp. salt
oregano, a dash
1/2 tsp. black pepper
tap water, a dash
Whisk ingredients well and toss with salad ingredients.
