    Spinach salad with Strawberries

    You can make all of the ingredients ahead... and simply add when you are ready to serve.

    Make the CRUNCHY ALMONDS before hand. Night before if you want to.

    Prepare dressing in blender... don't blend until ready to use.

    Wash and place in bowl:
    1 bag fresh spinach ( or 1 1/2 bags of baby spinac - easier as you don't have to snip the stems)

    Add just before serving toss with:

    2 pints fresh sliced strawberries
    1/2 cup sugar

    3 t. minced fresh onions
    1/2 t. worcestershire sauce
    1/2 t. paprika
    1 cup vegetable oil
    1/2 cup vinegar
    1 cup sugar

    Blend in blender or food processor until thick.
    (Prepare and and leave sitting on counter. blend when ready to serve salad)


    1 cup slivered almonds
    4 T. butter
    1 cup sugar

    Melt butter over low in large frying pan. Add almonds until well coated. Add sugar.. Stir until brown. Do not let this burn. Pour on aluminium foil and let cool. Place in blender and blend until it looks like coarse chopped nuts OR place in zip lock bag and chop with kitchen mallet.

    Assemble spinach, strawberries and almonds. Drizzle with dressing just before serving. (Don't do it too soon as the spinach with wilt)

    ALTERNATE: Instead of the STRAWBERRIES, use a can of DRAINED Mandarin room temperature.
