This is an awesome side dish-it is so easy and is very colorful when serving-I am sure that there are a ton of variations! My whole family loves this and I get lots of requests for it-even as simple as it is!
2 Cans Black Beans- Drained
2 Cans Whole Kernal Corn- Drained
1 Red & 1 Green Peppper
1/2 Cup Diced Red Onion
1/2 Cup Italian Dressing or you can make your own balsamic/olive oil combo based on your taste
Fresh Garlic (I press 2 or 3 cloves, but that is may be too much if you aren't a garlic fan!)
1 Tsp. Cayenne Pepper
1/2 Tsp. Ground Cumin
1/2 Tsp. Fresh Ground Pepper
Fresh Parsley if you have it
Empty corn and beans into your serving bowl. Chop Veggies and throw in also. Mix the dressing with the garlic and the spices and pour over the bean/corn mixture. You can serve it right away, but it is the best of it sits over night.
It is easily 1/2'd if it seems too much-but honestly it keeps quite a while in the fride and just gets better after a couple of days!
