Marinated Vegetable Salad (I used to ask mom to bring this to every special dinner.....)
1 (20 0z) pkg frozen Calivornia blend vegatables
3 stalks celery, sliced 1/4 in chunks
1/2 C sliced pimento stuffed green olives
1 small can whole pitted ripe olives
1 med can mushroom pieces and stems, drained
3 to 4 green onions, chipped
3 tomatoes, cut into 8 wedges each
Dressing:
1 pkg Hidden Valley Ranch (dry)
2/3 C oil
1/4 C vinegar
Combine dressing ingredients and let stand about 20 minutes.
Bring the frozen vegetables to a boil in a small amoutn of cold water. boil for 2 minutes. Add the remaining vegetables and toss lightly. Pour the dressing over the vegetables and chill for 24 hours, tossing 3 or 4 times.
