Everytime I make this salad everyone loves it. I don't usually add the walnuts cause most of us around here don't like them. But the dressing/strawberry/blue cheese combination is awesome!
SPINACH AND STRAWBERRY SALAD
4 cups baby spinach
1/2 cup sliced strawberries
1/4 cup chopped toasted walnuts
sweet vinaigrette dressing (recipe follows)
bleu cheese crumbles
SWEET VINAIGRETTE DRESSING
3/4 cup sugar
1/2 cup red wine vinegar
2 cloves garlic, minced
1/2 tsp. salt
1/2 tsp. paprika
1/4 tsp. white pepper
1 cup olive oil
Toss spinach and strawberry slices with walnuts and dressing. Mound spinach on salad plates trying to make sure walnuts and strawberry slices are on top (just looks prettier) Add some bleu cheese crumbles and serve.
