Found this in a Bobby Flay cookbook and we had it last night. YUMMY!!
Sweet Potato-Green Onion Salad
4 md sweet potatoes; (peeled),sliced 1/2"
1 bunch green onions
3/4 c olive oil
1 tb Dijon mustard
1/4 c cider vinegar
1/4 c balsamic vinegar
1 tb honey
Salt and freshly ground pepper
1/4 c coarsely chopped flat-leaf parsley
Preheat grill. Brush potatoes and green onions with 1/4 cup of the
olive oil. Grill the potatoes until tender, 4 minutes on each side.
Cut the potatoes into 1-inch cubes and finely chop the green onions.
(Do not grill the green onions.)
In a large bowl, whisk together the remaining 1/2 cup olive oil,
mustard, vinegars, and honey and season with salt and pepper. Add the
potatoes, green onions and parsley and mix until the potatoes are coated
with the dressing. Season to taste with salt and pepper.
(I missed the part about not grilling the green onions so I threw them on for a few minutes, it was still really good)
