COOKINKAT'S CHICKEN SALAD
4 large chicken breasts skinned (or leftover chicken)
Tony Chachere's Creole Seasoning
Poultry seasoning
(I season the chicken heavily with the above ingredients and roast on top of aluminum foil balls in the crockpot for about 2 hours. You could cook the chicken anyway you please!)
2 stalks celery, chopped
1/2 red onion, finely chopped
2 Tbsp. sweet pickle cubes (give or take)
zest of 2 lemons
Dressing:
3 tbsp mayonnaise
3 tbsp olive oil
1 1/2 tbsp red wine vinegar
juice of 2 lemons
Salt & pepper
Chop chicken and add celery, onion, sweet pickles and zest.
Mix dressing and add to chicken mixture. Mix thoroughly and refrigerate.
Can add toasted almond slices at the end, but most of my family won't eat them! LOL!! Picky Eaters!
