  • Tomato, Cucumber and red onion salad with mint

    2 large english cucumbers
    1/3 cup red wine vinegar
    1 tablespoon sugar
    1 teaspoon salt
    3 large tomatoes , seeded, coarsely chopped
    2/3 cup chopped red onions
    1/2 cup chopped fresh mint
    3 tablespoons olive oil


    Cut cucumbers in half, scrape out seeds. Cut halves into 1/2 " pieces. Place in large bowl. Add vinegar, sugar & salt. Let stand at room temp for one hour, stir occasionally.
    Add tomatoes, onions, mint and oil and blend. Season with salt and pepper.

      Me Too, But I'd Leave Out The Mint I Think.

        I leave out the mint most of the time, never think about buying it. But it's still good even without the mint.

          Okay I modified this and I sure either way would be awsome.

          I used the same amount of wine vinegar, salt, sugar and oil. But on cucumber, a bunch of miniture heirloom tomatoes, 1/3 c. chopped vidialia onion, chopped basil and chunks of fresh mozzerela(sp). Yummy

            Ukrainian Cucumber Salad Mizeria

            This is a Ukrainian favourite.

            4-6 medium cucumbers
            1 teaspoon salt
            1 onion or 3 scallions
            cup sour cream
            cup vinegar
            1 tablespoons sugar
            Chopped parsley

            Wash and score fresh unwaxed cucumbers lengthwise with a fork, or peel cucumbers. *Slice into thin rounds, sprinkle with salt, and let stand for 10 minutes or so. *Slice onion or scallions into thin rounds. *Mix sour cream, vinegar, and sugar. *Pour off liquid from cucumbers, add onion, pour dressing over all, mix, and chill. *Sprinkle with parsley before serving.
