  • Red Quinoa Salad

    Just tried this last night and it was delicious!

    Red Quinoa Salad
    Makes about 4 cups.

    3/4 cup Red Quinoa (pronounced Keen-wa)
    1 1/2 cups water
    1 tsp minced garlic
    2 TBSP extra virgin olive oil (I used extra light olive oil)
    1/4 cup fresh lemon juice
    2 tsp minced or grated lemon zest
    1 medium peeled, seeded, and diced cucumber
    1/2 cup canned garbanzo beans, rinsed and drained
    1 TBSP chopped fresh dill (or 1 tsp of dried dill)
    1/2 cup chopped fresh flat leaf parsley
    1/2 cup hazelnuts, lightly toasted and coarsly chopped
    1 thinly sliced green onion (white & green parts)
    1/4 cup grated carrot
    1/2 cup golden raisins (optional, I left those out)
    Sea salt or Kosher Salt, to taste
    pepper, to taste

    *Rinse Quinoa in cold water and drain well. Put the drained quinoa in a heavy medium saucepan and dry roast the grain over medium heat, stirring occassionally, for about 1 minute.

    *Add the water, bring to a boil, then reduce to a simmer and cover with a tight fitting lid. Cook for about 15-20 minutes or until all water is absorbed.

    *Remove from the heat and let stand, covered, for 10 minutes. Remove the lid, fluff grains with a fork, and let cool to room temperature.

    *In a large bowl, combine the cooked quinoa with the remaining ingredients and toss well.

    *Serve. Yum.

    Quinoa is a grain that comes from the Andes Mountains of South America. Quinoa contains more protein than any other grain. Quinoa is gluten Free.

    Sounds yummy - I love quinoa and its lowfat and good for you to as well as tasty - will pick up the items I dont have on hand and will make it this week - thank you for posting it.

        Red Quinoa Salad

        Marinated Sweet And Sour Carrot Salad

        1 Lbs Carrots, Peeled, Thinly Sliced-boiled 4-5 Minutes And Cooled.
        Mix The Following And Pour Over Carrots.
        C Chopped Green Pepper
        1 Medium Red Onion, Sliced
        C Sugar
        C Red Wine Vinegar
        1 Tsp Worcestershire Sauce
        Tsp Salt
        1 Can Tomato Sauce
        C Oil

        Chill 24 Hours Before Serving
