Had this tonite with dinner, and it was cool and refreshing and different! Since I'm dieting, I used sugar-free jello, and it was STILL good because the soy sauce drowns out the artificial sweetener aftertaste.
Chinese Jello Salad

1 sm. pkg. orange Jello
3/4 c. boiling water
1/2 c. cold water, add ice cubes to make 1 cup
1 1/2 tbsp. soy sauce
1 tbsp. lemon juice
1/2 c. shredded carrot
1/2 c. sliced celery
1/2 c. drained bean sprouts (or fresh blanched)
1/4 c. sliced water chestnuts
1 tbsp. scallions
Dissolve Jello in boiling water, add cold water and ice cubes. Add soy sauce, lemon juice and stir until ice is melted and mixture is slightly thickened. Remove unmelted ice and add remaining vegetables. Spoon into mold. Chill.
