    Lynn 's Broccoli Salad

    It is great for potlucks or buffet meals.
    Make a day or so before you wish to serve to meld the
    ingredients. I have used sugar substitutes for the white sugar and
    also used nonfat or low-fat mayonnaise and it still tastes
    great! Prep Time: approx. 15 Minutes. Cook Time: approx. 15
    Minutes. Ready in: approx. 30 Minutes. Makes 6 servings.


    1/2 bag Bacon pieces (Hormel)
    1 bag fresh broccoli heads (can use broccli choppedi into bite size pieces)
    1/4 cup red onion, chopped
    1/2 cup craisins
    3 tablespoons white wine vinegar or seasoned rice wine vinegar
    1/4 c white sugar
    1 cup mayonnaise
    1 cup sunflower seeds or other nuts you like
    1 cup grated cheddar cheese


    Directions
    1 In a medium bowl, combine the broccoli, onion and
    craisins. In a small bowl, whisk together the vinegar, sugar and
    mayonnaise. Pour over broccoli mixture, and toss until well mixed.
    Refrigerate for at least two hours.
    3 Before serving, toss salad with crumbled bacon, cheddar cheese and
    sunflower seeds or nuts.


    Bodacious Broccoli Salad

    prepare at least two hours before serving. Prep Time: approx. 15 Minutes. Cook Time: approx. 15
    Minutes. Ready in: approx. 30 Minutes. Makes 12 servings.

    8 slices bacon
    2 heads fresh broccoli, chopped
    1 1/2 cups sharp Cheddar
    cheese, shredded
    1/2 large red onion, chopped
    1/4 cup red wine vinegar
    1/8 cup white sugar
    1 teaspoons ground black pepper
    1 teaspoon salt
    2/3 cup mayonnaise
    1 teaspoon fresh lemon juice



    Directions
    1 Place bacon in a large, deep skillet. Cook over medium
    high heat until evenly brown. Drain, and crumble.
    2 In a large bowl, combine broccoli, cheese, bacon and onion.
    3 Prepare the dressing in a small bowl by whisking
    together the red wine vinegar, sugar, pepper, salt, mayonnaise
    and lemon juice. Combine dressing with salad. Cover, and
    refrigerate until ready to serve.

    Fresh Broccoli Salad

    Prep Time: approx. 15 Minutes. Cook Time: approx. 15
    Minutes. Ready in: approx. 30 Minutes. Makes 8 to 10 servings.
    2 heads fresh broccoli
    1 red onion
    1/2 pound bacon
    3/4 cup raisins
    3/4 cup sliced almonds
    1 cup mayonnaise
    1/2 cup white sugar
    2 tablespoons white wine vinegar

    Directions
    1 Place bacon in a deep skillet and cook over medium high
    heat until evenly brown. Cool and crumble.
    2 Cut the broccoli into bite-size pieces and cut the
    onion into thin bite-size slices. Combine with the bacon,
    raisins, your favorite nuts and mix well.3 To prepare the dressing, mix the mayonnaise, sugar and
    vinegar together until smooth. Stir into the salad, let chill
    and serve.
