Ingredients:
1c carrot juice
1/2 tsp thyme
1/2 tsp salt
1/8 tsp cayenne
1/2c quick cooking barley
3 tbs. lemon juice, fresh if possible
1 tbs. olive oil
1 19 oz can of rinsed and drained black beans
1c diced tomatoes
1/2c diced avocado
Combine carrot juice, thyme, salt & cayenne in pan & bring to a boil over med. heat; add barley; reduce to simmer & cover. Cook about 15 min. until barley is tender. Meantime, whisk lemon juice & oil in lge bowl. Add the barley & any liquid that remains; toss to coat it, add the beans, tomatoes and avocado; toss.
