I got this about 30 years ago out a Family Circle magazine-this is a family favorite!
BLT Potato Salad
Ingredients
DRESSINGG
1 c Mayonnaise (Good Quality-I use Hellman's)
1 tb Prepared white horseradish
1 tb Cider vinegar
2 ts Salt
1 ts Granulated sugar
1/2 ts Freshly ground pepper
SALAD:
2.5 lb Potatoes, peeled, cooked and -cut into 1/2 inch pieces about 6 cups
1/2 c Sliced scallions
1/2 c Dill relish
2 Med-sized tomatoes cut into 1 1/2 inch chunks (I use grape tomatoes)
8 md Sized leaves Boston lettuce, -stacked and cut into1-inch-wide Strips
5 Strips bacon, cooked crisp-drained and crumbled.
Directions
DRESSING: Whisk dressing ingredients in a large bowl.
Add potatoes, scallions and Relish
Toss gently to mix and coat.
Cover and chill at least 1 hour for flavors to blend or up overnight.
Just before serving, gently layer tomatoes and lettuce on top
Sprinkle with crumbled bacon.
(I also sprinkle mine with finely grated cheddar cheese)
