Knott's Berry Farm Pea Salad

3 lbs frozen peas,rinsed in hot water but NOT thawed
2 cups sweet pickles chopped
1 cup diced red bell pepper
2 cups diced celery
12 hard bolied eggs (whites only diced) discard yolks
1/3 cup finely chopped onion
1 cup cubed american cheese

Mix all the top ingredients in a large bowl

Mix the bottom ingredients in a bowl then add to the top ingredients gently toss.

For the dressing:

3 cups mayo (must be mayo)
1/4 cup sugar
1/4 cup sweet pickles chopped
1 Tbsp. diced red bell pepper
