This is mine and I'm always asked for the recipe.
12-14 red potatoes (about 5lbs)
4 celery ribs, chopped
1 sm. onion,chopped
1 med. bell pepper chopped
1 med. jar diced pimentoes
5oz. jar sweet pickle relish
6-8 hard boiled eggs, diced
salt & Pepper to taste
about 1½ pints of a good mayonaisse. (I use Kraft)
wash potatoes and cook with skin on till fork tender.(don't over cook)
Pour off boiling water, and immediately pour cold water over potatoes until they can be handled with out burning.
Peel and cube/dice potatoes add remaing ingredient,with mayo being the last. Add mayo until it is mixed good, but salad is not soupy/runny.
I sometime add bacon bits in mine gives a twist on the flavor but its good.you can also add a squirt of mustard in before mixing.
