Most gals make potato salad like their Mother made and I did the same for years until a co-worker would bring a potato salad to pot lucks etc and my DH would rant and rave over how good it was, so I thought I would try it and it is good.
5 lbs Potatoes
12 Eggs
1 Small to med Onion, chopped
1 small Jar Sweet Pickles or Gerkins
2-3 Tbls Celery Seed
Mayo
Salt and Pepper
1. Cook potatoes with or without skin. I leave the skin on and usually use Golden Yukon or little red ones. Boil eggs and cool.
2. Cut potatoes and eggs and onion and pickles into large bowl.
3. Mix approx 3/4 cup to 1 Cup Mayo with pickle juice with a wire whisk. Add to the pototo, egg mixture. Sprinkle celery seed on top of mayo dressing, add salt and pepper. Stir well and refrigerate for couple of hours and garnish with hardboiled eggs if desired.
