    Corn Bread Salad

    1 box Jiffy Cornbread Mix
    9-12 strips bacon - fried and crumbled
    1/2 cup sweet salad pickle cubes
    1 bell pepper, chopped
    2 cups celery, chopped
    1 medium onion, chopped
    4 medium tomatoes, chopped
    1 cup mayonnaise + 1/4 cup sweet pickle juice

    Mix mayo and pickle juice together, set aside. Bake corn bread according to pkg. directions. Cool and crumble. Mix bacon, pickles, pepper, celery, onion and tomatoes together. Set aside. Layer bread and chopped vegetables. Store in refrigerator. Wait until ready to serve and then put mayonnaise mixture on top and toss.

    This is a delicious. It has a sweet flavor. It works as a side dish really well or even alone. One taste and I was hooked.

    2 pkgs. cornbread mix
    1 onion
    2 bell peppers
    2-3 tomatoes
    1 jar Baco's
    4 boiled eggs
    1 sm jar real mayo (not Miracle Whip)

    Make cornbread according to pkg directions. Cut up onion, bell pepper, & tomatoes, very, very small. Crumble cooked cornbread in bowl, add vegtables, diced eggs, mayo, & jar of Baco's.

    This might not sound to good, but let me tell you, you cant stop eating it! I like to make it with beans sometimes, but I could eat it alone, all day. A friend used to bring it to spreds at work all the time. Goes very fast. This recipe makes a whole lot. Take it to a family reunion!

        Whenever I attend a family gathering I am always asked to bring this dish.

        1 box of cornbread prepared, (add 1/2 tsp. chili powder to mixture) and cooled
        1 can of corn
        1 can of pinto beans
        2 large tomatoes, diced
        1 lg green pepper, diced
        1 lg onion, diced
        2 cups mexican cheese
        1 lg bottle of ranch dressing

        Prepare cornbread according to pkg directions, add chili powder to mixture. Bake and cool completely. Cut into cubes.

        While cornbread is cooling pour beans, tomatoes and corn into a colander. Add chopped pepper and onions. Mix and drain.

        Layer cornbread, vegetables, dressing and cheese into a casserole dish. In that order. Finish up with cheese. Refridgerate until cool and serve.

          I just went and got the recipe. It does not tell you to drain the stuff so I bet I didn't! I need full directions sometimes! *L*

          Chef Jeff's Recipe
          Chile-Cornbread Salad

          1 (8 oz.) package cornbread mix, such as "Jiffy" brand
          1 (4 oz.) can chopped green chiles
          1 (1 oz.) package Ranch-style dressing mix
          1 (8 oz.) container sour cream
          1 cup mayonnaise
          2 (15 oz.) cans pinto beans, rinsed and drained
          1 cup chopped green bell pepper
          2 (15 1/4 oz.) cans whole kernel corn, drained
          3 large tomatoes, chopped
          10 bacon slices, cooked and crumbled
          2 cups (8 oz.) shredded Cheddar cheese
          1 cup sliced green onions


          Prepare cornbread mix according to package directions adding chopped green chiles; cool.

          Combine dressing mix, sour cream, and mayonnaise; set aside.

          Crumble half of cornbread into a large bowl. Top with half each of beans, sour cream mixture, bell pepper, and next 5 ingredients Repeat layers. Cover and chill overnight.

            Cristy's cornbread salad

            1 recipe cornbread crumbled
            1 can pinto beans drained rinsed
            1 can shoepeg white corn drained
            2 large tomatoes diced
            1 large purple onion or vidalia chopped
            1 green bell pepper and 1 red bell pepper chopped
            1 large bottle of ranch dressing
            8 oz of fine shredded sharp cheddar cheese
            1 pound bacon cooked crumbled
            1 bunch green onion chopped

            Layer in order given, spreading evenly into a 9x13 deep casserole dish. Cover with plastic wrap and chill overnight.
