    **Sugar Pie's Rotisserie Rub**

    2 tsp kosher salt
    2 tsps paprika
    tsp chili powder
    1 tsp garlic powder
    2 tsps freshly ground black pepper or coarse ground black pepper
    1 tsp onion powder
    2 tsp. dry parsley
    1 tsp. dry rosemary
    1 tsp dried thyme
    2 tsp. dried orange or lemon rind (Spice Islands makes this)

    Mix well and rub inside and out of a 4-5 pound chicken, or 2 (3 lb.) chickens. Tie legs together, and tuck wing tips under. Cook on rotisserie or in 325F oven approx. 1 hours or until juices run clear.
