Bean' Zippy Onion Relish
3 large onions chopped
1/2 c tomato sauce
3 T. ketchup
2 T. water
1 1/2 t sugar
1/2 t dried oregano, crushed
1/4 t salt
1/4 t garlic salt
1/4 t crushed red pepper
Combine the ingredients in a medium saucepan and bring to boiling: reduce heat and simmer, covered about 20 minutes, until onions are tender. Store in a tightly covered container in the fridge for up to 2 weeks.
Makes 2 1/2 cups.
