This is a really good fresh salsa recipe. It came from the Meyer Tomato website.

Island Tomato Salsa

5 med. vine-ripened tomatoes
2 tsp. minced cilantro
1/2 tsp. salt
2 tsp. balsamic vinegar
5 green onions
2 tsp. olive oil
1 jalepeno pepper, seeded and minced
pepper and salt to taste

Core and dice tomatoes into medium bowl, add salt and let sit 1/2 hour; pour off juice. Add green onions, jalapeno pepper, and rest of ingredients. Chill. Serve with tacos, quesadillas, steak, fish, chicken, and chips.

Makes 3 cups
