No pectin needed? I am assuming that the jello makes it gel, therefore ya get jelly. Does this keep well on the shelf after processing in a water bath? How long for the water bath?

PEACH JAM (the best I have ever tasted) by Buckwheat
PEACH JAM
7 cups fresh peaches, mashed
3 cups sugar
2 packages peach jello
1/4 t. almond flavoring
Combine sugar and peaches in a heavy saucepan.
Cook for about 20 minutes, stirring constantly
Remove from the heat and stir in the flavoring and jello until dissolved
Pour into sterilized jars.Tags: None
