I posted this on the old CK board. It is real easy and yummy. You can make it as hot as you like. The canned red jalapenos makes it hot, REAL hot!
This is not a saucy salsa but rather what some call a Pico de Gallo. It holds up well for days.
Pico de Gallo
Ingredients (makes 1 quart)
*4 large tomatoes - diced with seeds & juices
*1/2 each - green, yellow and red sweet bell peppers - seeds and veins removed
*1 small onion - diced
*1 1/2 bunches of green onions - sliced with tops
*1 1/2 bunches cilantro
*1/2 can / jar red jalapenos - diced (HOT! ajust amount depending on your tolerance for heat, I find these in an Tex-Mex grocery store)
*1-3 jalapenos (sometimes these are not very spicy but adds great flavor)
*1/2 T chili powder
*1/2 cumin
1 clove garlic - minced
1 T fresh lime juice
All fresh ingredients and red jalapenos can be pulsed in the food processor. Make as chucky as you like.
