This is my brother's recipe and as much as it kills me to have to admit it...it is absolutely the best homemade spaghetti sauce I have ever had. I like a little more basil and oregano, but it really turns out great. You can add meat to it if you prefer, but it is fantastic just the way it is.
Greg's Spaghetti Sauce
5 pounds canned tomatoes, chopped
2.5 pounds tomato sauce
5 TBSP basil
2 TBSP oregano
1 TBSP thyme
2 TBSP garlic, minced
2 onions chopped fine
Mushrooms, chopped fine
Saute onion, mushrooms and garlic until tender. Can add bell peppers if desired, sauté with onion mix. Add tomatoes and seasonings. Add water to thin if necessary. Allow to simmer to season then add salt and pepper to taste preference.
Forgot to mention, he is a chef too....sometimes that is a hard one for me to swallow as well. He is living my dream job!!!
