    Banana Mango Salsa

    1 large mango, diced
    1 large banana, diced
    1 large lime, juiced (do not use the bottled stuff)
    1 green onion, sliced
    TB diced jalapeno or more to taste (I prefer to use the canned)
    cup chopped fresh cilantro
    tsp. Garlic powder
    - teaspoon ground cumin
    1/4 - teaspoon curry powder
    I TB sugar
    Salt to taste
    1 TB finely minced candied ginger (optional)

    In a medium bowl, mix lime juice (I add pulp too), garlic powder, cumin, curry, sugar and stir to combine. Add jalapeno, green onion and cilantro. Fold in mango and banana and gently toss to coat with juices. Add ginger if desired. Add salt and adjust other seasonings to taste. Cover and refrigerate for 30 minutes for seasonings to meld.

    Note: You can substitute peaches, papaya or nectarines for the mango if you wish. Fruit should be ripe, but firm.

    Serve with chicken, fish, pork or tortilla chips.
