CHIMICHUNGA SAUCE

This green chili sauce I use on my chimi's. Someone on the CK boards gave it to me a year back. I've used it ever since and we been extremely pleased with it.

2 qt. beef stock
1 green pepper
3-4 green onions
1 can green chilies
1 yellow onion
2 cloves garlic
1/2 to 1 t. oregeno
Salt

Coarsley cut veg. add to broth and spices. Simmer til veg. are done. cool and run through processer. heat up and thicken with flour. Serve warm over fried himi. I like you searched long and hard for a good sauce for the chimi's. You'll love this one!

TIP: Wrap your favorite chimi contents in 'two or three' flour tortilla's before frying for a more authentic restaurant flakie layered style crust. This also helps keep the frying oil out of your filling.
