Vietnamese Hot Ginger Dipping Sauce
2 garlic cloves, crushed
2 tablespoons sugar
2 fresh red chile pepper, seeded and minced
2 tablespoon grated fresh gingerroot
4 tablespoons fresh lime or lemon juice
2 tablespoons nuoc mam (Vietnamese fish sauce)
1 tablespoon of Vietnamese hot chili sauce
Combine the garlic, chili, sugar, chile and ginger in a small bowl. Crush the mixture to a paste.Add the lime juice and fish sauce and stir to blend.
