Watermelon Jam by Buckwheat

    1 & 1/2 cups watermelon, chopped & seeded
    3 cups sugar
    1/4 cup fresh lemon juice
    1 package powdered fruit pectin
    3/4 cup water

    Stir together watermelon, sugar & lemon jiuce. Set aside for about 10 minutes, stirring occasionally. In a small saucepan, blend fruit pectin and water. Bring to the boil over high heat, and boil, stirring for 1 minute. Stir pectin mixture into watermelon mixture. Stir cinstantly until sugar is dissolved, about 3 minutes. Quickly pour into jars and cover. Let stand at room temp for 24 hours to set. Store jam in frig for up to three weeks.
    Good on everything!
