This can be used as topping for pancakes or icecream as well as on toast or biscuits. Very yummy preserves!
Sour Cherry Preserves
3 lbs pitted sour cherries
1 box powdered pectin (sure-jell)
5 cups sugar
Prepare canning jars and lids.
Combine cherries and pectin in a large saucepot. Bring to a boil, stirring often. Add sugar and stir until dissolved. Bring to a rolling boil, boil hard for 1 minute, stirring constantly. Remove from heat. Lightly skim off foam, if necessary. Stir to distribute fruit. Ladle into hot jars. Place lids on jars and screw on bands. Process in boiling water bath for 15 minutes.
