Kudzu Blossom Jelly (DO NOT DOUBLE RECIPE)
4 cups Kudzu Blossoms
4 1/4 cups water
1 tablespoon fresh lemon juice
1 (1 3/4 ounce) package powered pectin
5 cups sugar
6 half pint sterlized jars with metal lids and bands
Gently wash kudzu blossoms in cold water. Place the 4 1/4 cups water in a 6qt. or larger pot and add kudzu blossoms. Bring to a full rolling boil and then reduce heat to simmer and simmer covered for 20 minutes. Remove blossoms from liquid and strain EXACTLY 4 cups liquid. You may need to squeeze liquid from the blossoms to get the EXACT 4 cups. Add 1 tablespoon fresh lemon juice to liquid and stir. Return to pot and stir in pectin. Over high heat return to a full rolling boil stirring constantly (stirring is important or it will boil over). Stir in sugar and return to a full rolling boil stirring constantly for 1 minute. Be sure to stir or it will boil over. Remove from heat, lightly skim foam off top with a spoon. Quickly pour jelly into hot sterilized jars, filling to 1/4 inch from top. Wipe jar rims. Immediately cover with metal lids and screw on bands. Process in boiling water bath 5 minutes. Cool on wire racks.
Yields: 6 half pints
NOTES:
Blossom liquid is gray until lemon juice is added.
You can prepare the kudzu blossom liquid and freeze until ready to use. Just thaw and proceed with next steps.
