ts the time of the year if you grow Zucchini, you probally have alot of them Smile This is such a easy recipe. They kind of remind me of crab cakes.
Zucchini Patties
2 cup grated zucchini
2 T grated onion
2 eggs
2 T oil
1 tsp favorite seasoning
1/4 Cup Parmesan cheese
1/2 Cup cracker crumbs
Mix all ingredients except oil. heat oil in skillet. Cook patties 2 min. on each side. Makes 6 servings.
