    Cheese Filled Rice Fritters (Crochette di Riso):

    About 60 fritters.

    5 c.water
    1 Tbls.salt
    2 c.uncooked Arborio rice
    4 eggs,beaten
    1 c.shredded Mozzaerlla cheese(4 oz.)
    1/4 c.freshly grated Parmesan cheese
    vegetable oil

    Heat water,salt & rice to boiling,reduce heat.Cover & simmer about 20 minutes or til liquid is absorbed(Do not lift cover or stir);cool.

    Mix rice,eggs & cheeses.Shape into 1 1/2 inch balls.Heat oil (2 Inches)in deep fryer or Dutch oven to 375.Fry 5 or 6 fritters at a time about 4 minutes or til golden brown;drain on paper towels.
