Bringing this recipe over from the other board. Everyone who's tried these has loved them so far, so I wanted to make it was posted here for you guys
Jade's Spicy Black Beans
Soak 2 pounds of black beans overnight. Make sure they're covered with at least 2 inches of water or more. Drain and rinse.
In olive oil, saute:
-1 onion, diced
-2 tablespoons minced garlic (we love alot of garlic! Adjust to your taste)
-diced Jalapeno (again, adjust to your taste. I used 1/4 of an 11 oz jar. Fresh Jalapeno would be great I'm sure.)
When the onion becomes translucent, add:
-the soaked beans
-8 cups chicken stock (the stock should just cover the beans)
-2 TBSP Oregano
-1 TBSP Ground Cumin
-1 TBSP Greek Seasoning (an awesome seasoning blend you can buy at your supermarket. It's one of those addicting spices you can put in just about anything, kind of like spike seasoning )
-2 Bay leaves
-2 TBSP lime juice
-1 TBSP dried parsley
-Salt Pork or bacon (I try to trim off some of the fat from my salt pork)
-Salt, pepper, and garlic salt to taste
Bring barely to a boil. Cover the pot, adjust heat to low and simmer for 2-3 hours until tender. Important: While cooking, taste and adjust seasonings - especially for salt, pepper, and garlic salt.
Serve with chopped fresh cilantro.
