I made this for breakfast to use up some leftover shredded hashbrown potatoes. It came out great served with some sour cream, eggs and breakfast sausage patties. You can certainly make it for lunch or dinner to and is a different way of serving potatoes.
Potato Latkes (Pancakes)
2 cups frozen shredded hashbrown potatoes
2 teaspoons garlic powder
2 teaspoons onion powder
½ cup chopped onion
2 eggs, beaten
¼ cup flour
1 teaspoon salt
½ cup oil for frying
1. Heat skillet over medium high heat with oil to fry up potatoes.
2. Combine frozen potatoes, seasonings, onion, eggs, flour and salt and mix until fully incorporated.
3. Drop a large spoonful of potatoes into hot oil and press down on them to form ¼ to ½ inch thick patties. Brown on both sides and let drain on paper towels.
These are best served HOT!
