STEWED WHITE BEANS WITH MIXED BELL PEPPERS
2 tablespoons olive oil
2 cups chopped bell peppers (a mixture of red, yellow and green)
1 med onion, chopped
3 tablespoons minced garlic
2 cans great northern beans (or other white beans of your choice)
1 can diced tomatoes (Italian seasoned with garlic and basil)
½ cup water
½ tsp. Crushed red pepper
¼ tsp sage
black pepper
1. Sautee chopped peppers and onions on medium heat until tender. Add garlic, and cook for another minute.
2. Add beans, tomatoes, water, crushed red pepper and sage. Bring to a boil, turn down heat and simmer for 15 minutes.
3. Season with black pepper.
4. Serve as a side dish. Don’t forget cornbread!
