Twice Baked Potatoes
2 large baking potatoes
1/2 cup sour cream
8 tsp.s freshly grated Parmesan cheese
4 slices bacon, crisply fried, drained and crumbled
4 tsp.s minced green onion
Salt and freshly ground pepper to taste
Minced fresh parsley and paprika for garnish.
Preheat oven to 425. Bake potatoes for 45 minutes. Remove from oven and reduce temperature to 350. Cut each potato in half horizontally and scoop out pulp into small bowl, reserving skins. Add sour cream, 4 tsp.s cheese, bacon, and onion to pulp and mix with fork until well blended. Add salt and pepper to taste. Fill potato skins and sprinkle wih remaining cheese. Bake until heated through, about 20 minutes. Add 1 to 2 pats butter to each half and top with sprinkling of parsley and paprika.
