    I came up with this recipe on one of those "I want something different" nights. Everyone loved it! It would make a great side dish with just about anything. Also, for pot-luck dinners!

    Cheesy Spinach and Rice Casserole

    1 cup uncooked rice
    1 can chicken broth
    cup water
    1 can Cream of Mushroom Soup
    1 can Cream of Mushroom Roasted Garlic Soup
    1 lb Velveeta, cut in cubes
    2 10 oz pkg. Chopped spinach, thawed and drained

    Cook rice in chicken broth and water. Set aside.
    Heat soup over med-low heat. Add Velveeta and cook until melted, stirring constantly.
    Combine rice, soup mixture and spinach.
    Pour into well-greased 13x9 pan.
    Bake at 375 for 30 minutes, or until bubbly and heated through.

    mmm this sounds soo good kat.. I can't wait to try it. I can use lower fat cheese and fat free soups and make it diet food...Do you think it would be any good that way?
