    6 medium russet potatoes
    1 can cream of chicken soup
    1 cup sour cream
    1 1/2 cups shredded cheddar cheese

    Cook unpeeled potatoes in simmering water until just slightly tender. Rinse in cool water and when cool enough to handle, peel and slice into 1/4" slices. Place slices in greased baking dish, overlapping slightly. In a saucepan, combine soup and 1 cup of the cheese over medium heat until cheese is melted. Remove from heat and stir in sour cream. Pour sauce over potatatoes in baking dish and top with remaining 1/2 cup cheese. Bake at 350 for about 30 - 35 minutes.

    These are great!
    Only I make mine with Cr of Mushroom, and don't mix any cheese with it. Just 3 layers:

    Cr of Mushroom Soup (mixed with little milk)
    Lots of grated Cheddar Cheese
    Cover & Bake about 1/2 hour, then uncover for about 10 more minutes
    A family favorite for years!

    P.S. Don't ya love it when the simplest things turn out to be sooooo good and everyone THINKS it's all kinda trouble, but it's not! Hee! Hee!

      This is my absolute favorite to bring to a potluck or serve with b-b-q.

      Company Potatoes

      2 lb. frozen hash brown potatoes (cube ones)
      1 can cream of celery soup
      1 can cream of potato soup
      ¼ cup chopped green pepper (or red/yellow pepper)
      1 cup milk
      ½ tsp pepper
      ½ tsp salt
      ¼ cup chopped onion
      1 cup sour cream
      1 cup grated cheese – sharp/cheddar

      Place hash browns in a 9x13” pan. Mix rest of ingredients and pour over potatoes. Cover and refrigerate overnight. Bake at 350 degrees for 1-1/2 hours. Enjoy while warm/hot!

        This is great too.

        Billy Klum’s Potato Casserole

        2 lbs. frozen hash browns (thawed)
        1/2 c. butter (softened)
        1 t. salt
        1/4 to 1/2 t. pepper
        1/2 c. chopped onion
        1 can cream of chicken soup (don’t dilute)
        2 c. grated cheddar cheese
        2 cups crushed corn flakes
        1/4 c. melted butter

        Mix together first 6 ingredients, put into a greased 9x13 pan. Mix corn flakes & melted butter together & top potatoes. Bake at 350º for about 45 to 50 min. Until HOT!
