    We had these tonight with some fried catfish!
    Very good!

    Ranch Potato Wedges

    6 Baking potatoes, peeled and thinly sliced into wedges
    1/4 cups minced garlic
    1/4 cup minced shallots
    1 & 1/2 sticks butter
    1 & 1/2 cups heavy cream
    3/4 cup grated parmesan cheese
    Salt & pepper to taste

    Preheat the oven to 350 degrees.

    Saute garlic and shallots in the butter over low heat for about 3-4 minutes.
    Add the potatoes and saute over medium heat for several minutes.
    Season with salt & pepper and stir in the cream and 1/2 cup of the cheese.
    Reduce liquid until it is thick enough to coat the potatoes.
    Transfer to a buttered dish and top with remaining cheese.
    Bake for aout 20-25 minutes or until potatoes are browned.

    Note: If you want them more spicy, add a pinch of cayenne.
