    Mississippi Potatoes

    8 cups potatoes, cooked and diced
    1 cup good mayonnaise
    1 t. salt
    1/2 t. pepper
    1 pound american cheese, diced
    1/2 cup chopped onion
    6 slices bacon, fried crisp
    1/2 cup green olives, sliced

    Toss potatoes with the mayo, salt, pepper, cheese and onion. Place mixture in a greased 9X13 inch pan. Sprinkle crumbled bacon and the olives on top.
    Bake at 325 (preheated) degrees for 1 hour.

    NOTE:
    As you can see, this is not for those on a diet!
