    Here is a yummy recipe using salsa - also wondering if anyone has any other good recipes using salsa. I also like to make egg roll ups -with salsa - nice light meal.

    I dont eat a lot of potatotes, and this is a bit of work, but its worth it for a nice treat, especially with company. Anyway here is the salsa potato recipe - guarantee you will love it:

    4 medium potatoes, 2/3 cup diced peppers (green, or red), 2 green onions thinly sliced, 2T butter, 3T flour, 1 1/2 c milk, 1/4c drained salsa, 1/4 tsp salt, 1 tsp cumin, 1 1/2 c grated Monterey Jack or cheddar - divided.

    Heat oven to 350. Butter 2 quart baking dish and set aside. Peel and thinly slice potatoes, place in microwave casserole dish and cover, cook on Hi for 7 mins, stir once, set aside. In bottom of the buttered baking dish layer half of each potatoes, peppers and green onions, repeat layer, set aside. In pan melt butter, add flour and blend well - add milk, salt and cumin and cook over med hi heat stirring til thickened, whisk in 1 cup of grated cheese and stir til smooth, stir in salsa. Pour mixture over potatoes, and sprinkle with remaining cheese. Bake for 35 mins or til potatoes are tender and top is bubbly and golden.
