    Pulled this little number out of The Modern French Culinary Arts Cookbook back in 1982, and is still a showstopper!!!

    Rice and Muchrooms, 6 servings

    2T chopped onion
    2T olive oil
    4T butter
    1c Long grain rice
    1c sliced mushrooms
    2c hot beef bullion
    1/3c dry white wine
    1t salt
    1/4t white pepper
    3/4c parm cheese (or more)

    Cook onions in oil till transparent. Blend in 2T butter, add rice into pan.Still untill rice is dry and sticks to pan. Add mushrooms, bullion, wine, s/p. Cover and cook for 15 minutes. Add remaining butter, and cheese. Toss w/ fork. Cover and let stand for 10 minutes to allow falvours to blend!
