    SAVORY SAUSAGE SOUP

    (A spicy hearty soup made with italian sausage.)

    1 lb. Italian Sausage (Hot or Mild)
    1 Cup Chopped Onions
    2 Garlic Cloves
    5-6 Cups Beef Broth (Canned)
    1/2 Cup Water
    1/2 Cup Dry Red Wine
    8 Oz. Can Tomato Sauce
    2 Cups Chopped Tomatoes (4 Medium)
    1 Cup Thinly Sliced Carrots
    1 Cups Sliced Zucchini or Okra
    1 Medium Green Pepper
    8 Oz. Tortellini or Ynockie
    1/2 Tsp. Basil Leaves
    1/2 Tsp. Oregano Leaves
    3 Tbsp. Chopped Parsley
    Grated Parmesan Cheese

    Remove sausage from casing. Brown sausage in dutch oven. Remove sausage and chop finely either with food processor or by hand.

    In the same pot saute onion and garlic in drippings.

    Add beef broth, water, wine, tomato sauce and other vegetables listed. Bring to boil. Reduce heat and simmer for 30 minutes uncovered.

    When serving top with grated parmesan cheese.
