Grandma's Vegetable Soup
1- 1 1/2 cup water
piece of seasoning meat or fatback
2 cans mixed vegetables
2 large cans diced tomatoes
1 can corn,drained
2 potatoes,peeled and cut into chunks
1 onion diced
1 tablespoon sugar
handful or 2 macaroni
In a large soup pot place the potatoes,onions and fatback. Cook until potatoes are fork tender.
In a large bowl, while potatoes are cooking put the tomatoes,mixed vegetables and drined corn,sugar, and salt and pepper (if using any), stir and mix well.
When potatoes are fork tender add the tomatoe mixture, and simmer 2-3 hours.
About 45 minutes before serving add the macaroni and let the juices cook it. This way it keeps the macaroni from getting mushy while the soup is simmering.
