BROCCOLI CHEESE SOUP

c grated carrots
c chopped celery
14.5 oz chicken broth
c.. Chopped onion
3 T butter
c flour
2 c milk
1 c Velveeta
10 oz. Broccoli (fresh or frozen, fresh has to be steamed)


Cook carrot and celery in c of broth until tender; do not drain. Cook onion in butter until tender, stir in flour. Gradually add milk; cook and stir till think. Add broth, cheese, broccoli, carrot and celery (and broth). Stir over low till cheese melts and soup is thick.
