VEGETARIAN SWEET POTATO STEW by Lotsofhats

    VEGETARIAN SWEET POTATO STEW

    2 tbsp veg. Oil
    1 ½ cups diced peeled sweet potatoes
    1 small onion, diced
    1 can (15 oz) black beans, rinsed & drained
    2 cloves garlic, finely chopped
    ½ can (4 oz) diced green chilis (optional)
    ½ yellow bell pepper, chopped
    ¼ cup tomato sauce
    ½ red bell pepper, chopped
    1 tbsp chilli powder
    2 cups water
    1 tsp, ground cumin
    ½ can (28 oz.) diced tomatoes
    Heat oil in large saucepan. Add onions and garlic; cook until lightly browned.
    Add bell peppers; cook for 5 minutes.
    Stir in water, tomatoes, sweet potatoes, beans, chilis, sauce, chili powder and cumin.
    Cook over medium heat for 20 to 25 minutes or until thickened and potatoes are cooked through.
    Season with salt and ground black pepper.

    Bumping, it's what's for dinner on 12-2-2014. I will be adding some ground beef to it too.

      I made this recipe several times last winter,the first time I followed the recipe to a tee.The 2nd time(& several other times afterwards,because its so good!! ) the only difference that I made to it was by adding meaty pork ribs that I first deboned,then cut off most of the fat(these were almost fat-free)& then by cutting them up into generous bite-sized cubes(they will shrink up some while cooking.)Then dredge the cubes into some flour & brown them in the large saucepan after the oil has heated up.After browning,take the cubes out of the pan & set aside.Then continue with this recipe by adding the onions & garlic to the large saucepan(adding a little more oil if needed.) & follow the above recipe till done. mmm......This freezes well to!
