As it was raining today - I made soup from a recipe I had been wanting to try - its really good, so thought to share it:

Bean and Squash Soup - 2 Tbsp margarine, 1/2 cup minced onion, 1 clove minced garlic, 4 cups water, 2 vegetable bouillon cubes, 1 can white kidney beans (rinse and drain), 4 cups chopped butternut squash (peeled and cubed), 2tsp minced ginger, dash pepper. Saute onion with garlic and margarine til soft. Add rem items and cook 1/2 hour or til soft enough to puree. Put in blender or use hand blender to puree.
